Aubergine Sambol

Ingredients
  • 250b aubergines
  • ¼ tsp turmeric
  • 200g big onions
  • 30g green chillies
  • 1 tsp salt
  • 4 tsp vinegar
  • 1 tsp sugar
  • ½ tsp mustard, ground
  • Vegetable oil
Method

Wash and slice the aubergine into rounds. Rub turmeric on the slices and fry until crisp. Chop the onions and green chillies and mix with salt, sugar, vinegar and mustard. Add the fried aubergine and mix.

Serves 4
