Pork Kalu Pol Curry
Ingredients
- 1kg boneless pork, cut into cubes
- Spice it Up! Kalu Pol Powder
- 20g ginger
- 150g onions, sliced
- 20g lemongrass, chopped
- 2 sprigs of curry leaves
- 1" rampe
- 10g cinnamon
- 20g curry powder
- 10g chilli powder
- 5g turmeric
- 2 tbsp vegetable oil
- Juice of 40g tamarind
Method
- Heat a pan, add the oil and when heated add the curry leaves, rampe and onions. Cook for a minute and then add all the ingredients except the pork, tamarind juice and Kalupol Powder. Cook for three minutes.
- Add the pork and tamarind juice. Cover and cook till the pork is tender. Now add the Kalupol Powder and mix well. Cook for a further five minutes.
Serves 8-10
